¾ C brown sugar
½ C pecan meal (finely ground pecans - almond is also tasty)
2 tsp dry mustard
1 tsp salt
1-2 tsp black pepper
12 slices thick bacon
Preheat oven to 400 degrees
In a wide, shallow dish, combine brown sugar, pecan meal, mustard, salt and pepper. Coat both sides of each bacon slice by pressing into the mixture. Lay bacon strips on a large rimmed baking sheet covered with parchment paper. Sprinkle remaining sugar mixture over bacon. Bake until fat begins to render. Rotate pan front-to-back and continue baking until bacon is crisp and brown. Remove, cool. Cut bacon into bite-sized pieces. Serve with crackers and cheese.
This is a delicious addition to a charcuterie board!
